Delicious Date Palm Jaggery Kheer (Nalen Gurer Payesh)

It is a traditional Bengali dessert made with the natural sweetness of date palm jaggery soaked within the scented rice with whole lot of milk so that the aroma of it’s fragrance mix with each other and linger through the taste of every spoon you eat...

Components of Concoction:
Milk 2 litres
Scented rice 1 handful
1 spoon ghee (clarified butter)
Date palm jaggery
Raisins
Cashews
Cardamom 1-2 ps
Let’s make it:
Soak One handful of scented rice (preferably Govindobhog chaal) for 30 minutes. Bring 2 litres of milk to boil. Drain the water from soaked rice, stir it in half spoon ghee for 1 minute in a heavy pan. Pour small amount of milk slowly, Keep the flame low and stir it occasionally so that the milk do not burn at bottom. Continue adding the milk in small amount till the rice softens. Add in the cashews & raisins. Pour the rest of the milk and continue stirring until you get the required consistency. Turn off the flame.
Now add the smashed date palm jaggery into the pan, stirring till the whole Kheer gives a yummy aromatic flavour & colour. Drop in the crushed cardamom and cover it for 15 to 20 mins. Let it cool for another half an hour. It says, Eat me! Your sweet aromatic kheer is ready to be served. Sense the texture and smell its aroma as you take it in your mouth. Its divinely delicious!
