Luscious Semolina (Suji) Kheer Malai

A traditional appetising Sweet made out of thin semolina and crushed cardamom infused in sweetened milk and garnished to excellence by pistachio crumble...

Components of Concoction :


  • Thin Raw Semolina 1 cup

  • Milk 1 lit

  • Milk powder 100 g

  • Sugar 1 cup

  • Cardamom 2 crushed

  • Clarified Butter 1 spoon

  • 5/6 pieces Pistachio crumbles


Let’s make it :


Bring half the milk to boil,

add in 1 spoon clarified butter, 1 crushed cardamom & half the sugar. As the sugar melts, flow in the raw semolina slowly stirring continuously, until smooth paste. Let it cool (not under the fan) Oil the palms of your hands and make desired shape (round/ oval) from the smoothie. Keep it aside.

Mix the milk powder with the other half milk and add in the other half sugar & the crushed cardamom. Let it boil in high flame for 5 mins....Turn the flame low and Drop in the Semolina balls slowly into the Malai stirring slowly with the spatula from bottom to side to top,,till the gravy thickens... Turn the flame off, remove from stove...

Garnish the Semolina Malai with Pistachio crumbles....

And your tender & tempting luscious Semolina Kheer Malai is ready!
